Ingredients You Will Need
· 2 cups of flour
· 1 cup of sugar
· margarine
· 3 eggs
· 1 teaspoon baking powder
· Juice and grated peel of one lemon
· ½ cup of milk
. 1/2 of cooking oil
Step 1: Prepare the Jiko
Light your jiko and let the charcoal become hot. Place a large sufuria on the jiko and add a layer of sand or salt at the bottom. This helps spread the heat evenly and prevents the cake from burning.
I love using a jiko because it reminds me that you do not need expensive equipment to bake something wonderful.
Step 2: Make the Cake Batter
In a bowl, mix the sugar and eggs until smooth. Add the cooking oil and stir well.
